About Dunton Hot Springs

Dunton Hot Springs is a small luxury resort nestled deep in the San Juan Mountains of the Colorado Rockies. This perfectly restored ghost town thrives on contradictions; hand- hewn log cabins exquisitely furnished, a life-worn saloon serving food of startling quality, lung torturing trails followed by pampering massages, sensuous hot springs beneath shimmering snow banks.

The success candidate will

  • Have 1 year plus experience in the same role

  • Have an excellent record of kitchen and staff management with good communication skills

  • Comfortable with computing basic mathematical calculations

  • Executes for the Executive Chef in planning and directing food preparation when necessary

  • Be responsible for managing and training kitchen staff

  • Ensures that the kitchen operates in a timely way that meets our quality standards

  • Have Fine dining experience is preferable

  • Work effectively as part of a team, leads intelligently

The roll includes

  • Working alongside F&B and general manager

  • Execution of designated mise en place (Daily prep execution)

  • Complete given recipes and instructions with precision

  • Conducting inventory

  • Planning breakfast, lunch and dinner menus

  • Maintain cleanliness and hygiene of your work stations and maintenance of equipment

  • Reporting any defects in machinery and equipment to department manager

  • Responsible for cleaning production and service area after each workday

  • Attend and participates in all kitchen briefings and meetings

  • In charge of any part time or stagier attached to the station

  • Monitoring food portion and waste to maintain profit margin

  • Follow and enforce grooming and hygiene standards

  • Attend and participate in training sessions as scheduled

  • Handling Ad Hoc duties as per assigned by superior

  • Minimize waste and maintain controls in product utilization to attain forecasted food cost.

  • A car is required to work at Dunton due to the remote location. 4WD or AWD recommended.
