Assistant Director of Food and Beverage

Primary Purpose of Position
This position is responsible for adherence to the direction of the Food & Beverage Division and its management in accordance with property standards. The Assistant Director of Food and Beverage directs, implements, and maintains a service and management philosophy which serves as a guide to respective staff. Responsible for all aspects of the front of house Food & Beverage division including, but not limited to: cost control, payroll management, purchasing, receiving, budgeting, vehicle protocols and staff development and training. The Assistant Food and Beverage Director is responsible for direct oversight of Front of House and Events departments with oversight from the Director of Food and Beverage.
Duties, Skills and Responsibilities
- Maintain comprehensive knowledge of the Food and Beverage operation- including menu selections, business operations, financials, point of sale systems, processes, property and partnership standards and Ranch Standard Operating Procedures.
- Collaborate with Director of Food and Beverage, and Human Resources on all areas of the employee engagement- including but not limited to recruiting, training, scheduling and performance management.
- Assist with maintaining and updating beer, wine and cocktail list
- Ensure accuracy of daily menu, buffet signage according to seasonality and item availability
- Extensive knowledge of property business levels, events and groups operations, headcounts, guest preferences/allergies/special requests and VIP guests.
- Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
- Collaborate with Department Leadership and Human Resources on recruitment, training efforts and performance management to ensure property and partnership standards.
- Ensure that all revenues and costs are within budgeted parameters.
- Review F&B management and staff schedules and ensure that they are in accordance with anticipated business demands.
- Assist Food and Beverage Director to Approve department payroll- including hours worked, commissions, ranch free and gratuities.
- Assist Food and Beverage Director to approve all Front of house purchases and collaborate with Executive Chef on back of house purchases and ordering to ensure continuity, cost control and product quality.
- Collaborate with Executive Chef on all menus; this is to include: development, presentation, pre-implementation tasting, and implementation.
- Monitor and handle guest complaints by following the five step procedures and ensuring guest satisfaction.
- Oversee weekly and monthly inventories on Beverages, Wine, Liquor and all operating supplies.
- Ongoing maintenance of POS system to ensure accurate information is available to the team.
Education/Experience/Certifications
- Minimum of 5 years’ experience in progressive food and beverage management roles.
- Four years’ experience as a General Manager or Beverage Director, preferably at a four or five star property.
- Maintain necessary Food and Liquor handling certificates in compliance with Montana State Law.
- Familiarity with food/beverage and labor cost control.
- Sommelier Certification preferred.
- Computer proficiency, preferably in Excel, Microsoft Word, Opera Cloud, Symphony and Open Table
- A valid driver’s license.
Position Requirements
- Ability to prioritize and organize work assignments; delegate work and follow-up as necessary to receive desired result.
- Strong written and verbal communication skills.
- Ability to exert physical effort in transporting equipment and wares, and endure consistent/continual physical movement in carrying out job duties- including but not limited to:
- regularly lift and/or move up to 30 lbs.
- navigating uneven terrain while walking and moving about the property.
- standing for long periods of time.
- sitting at a desk/work station for up extended periods of time.
- Ensure security and confidentiality of guest and hotel information.
