Description

This position is responsible for maintaining and enhancing the quality of all baked/pastry goods served throughout the Hotel Hershey, while maintaining a positive and focused environment.

The Hotel Hershey is situated high atop the town of Hershey and has 276 guest rooms, including 48 cottages, as well as 25,000 square feet of meeting and function space. Job Duties (Items marked with an asterisk are essential functions of this position):

  • Direct the planning and development of all Pastry menu's to include Banquets, Trevi 5, Circular, Harvest, and Chef's Market, ensuring that each is thematically suited to the venue and audience.*

  • Plan and manage all production to ensure adequate product is available to support the business demands and maintain an even level to comfortably meet deadlines and maintain quality and standards.*

  • Collaborate with Executive Chef, Executive Sous Chef, Purchasing Manager and all Sous Chefs to ensure alignment and plan for special events, promotions and day to day business.*

  • Organize, set, and complete food ordering pars and proper storage of baking and pastry goods. Ensure that monthly food inventories are completed by the assigned deadline and with accuracy.*

  • Supervise, train, motivate, delegate, and counsel team members for success and growth to maintain high quality of food presentation to reflect the standards of The Hotel Hershey. Set and demonstrate high standards of professionalism in order to create a positive and team focused work environment.*

  • Control labor and operating expenses through effective planning, budgeting, purchasing decisions and maintain inventory control methods while focusing on creative cost control and revenue generating solutions to maximize profit. Monitor food production, ordering and waste.*

  • Ensure that sanitation/ HACCP standards as set forth by HE&R, local, state and federal regulations are in compliance as well as the cleanliness and organization of the kitchen. Develop, demonstrate, and maintain a culture of safety and cleanliness.*

  • Participate and be available for all media events as required. The position is the voice and image of the dessert program of The Hotel Hershey to the community and the media.*

  • Plan and execute specialty cakes and other products requiring an elevated skillset.*
  • Perform other duties as assigned.

Qualifications:

  • Minimum of 7 years of related experience.

  • Industry Experience - Food & Beverage

  • Minimum of 4 years supervisory experience.

  • 18 years of age or older.

  • Must show control and team leadership to ensure a positive and efficient crew.

  • Must be mathematically proficient to calculate proportions, percentages and volume to support the pastry department..

  • Must be comfortable in public facing role

  • Post-Employment - Serv-Safe

  • Associate’s degree - Culinary Arts, Culinary Management

  • Relevant work experience can be substituted for education - 9 years

Knowledge, Skills, and Abilities:

  • Must be able to demonstrate and teach a very high level of pastry and bakery skill set across a full range of techniques
  • Must be able to maintain a positive attitude under pressure.

  • Must be able to accept constructive criticism

  • Must show control and team leadership to ensure a positive and efficient crew.

  • Must be mathematically proficient to calculate proportions, percentages, and volume to support the pastry department.

  • Must be comfortable in public facing role
